Potato Starch is a great gluten free replacement for rusk/breadcrumb, ideal for creating gluten free versions of your favourite burgers and sausages.
It is also widely used as a thickener for sauces and batter, so commonly used by Chinese restaurants.
- Has a low pH (acidic, e.g. vinegar,
wine, tomato based products, does not go watery or break down)
- It is more heat stable (boil longer,
enhanced shelf life on hotplate)
- Has better stability (stays thicker
longer, more resistant to processing).
