Korma Curry Powder

A korma is a tasty, mild & creamy Indian curry dish packed with flavours - this seasoning makes it simple to rustle one up from scratch.

Chicken Korma Recipe:

Ingredients:

  • 500g boneless chicken thighs
  • 50g korma curry powder
  • 1 x 400ml tin coconut milk
  • 1 large onion, finely sliced
  • 25g cashew nuts
  • 25g almonds
  • natural yoghurt
  • chillies (optional)

Method:

  1. In a large bowl, add the chicken, 30g curry powder and 2 tbsp yoghurt, mix well until combined and leave to marinade for at least 2 hours.
  2. While the chicken is marinating, heat oil in a pan and cook the onions until soft and caramelised, add the almonds & cashews and set aside to cool.
  3. Once cooled, add the onion mixture to a blender with the coconut milk and chillies (optional) and blend until smooth.
  4. Heat oil in a pan and sear the chicken until browned on all sides, add the onion mixture, 20g curry powder, 250ml water and bring to the boil.
  5. Cover and simmer for 20-25 minutes or until the chicken is tender.
  6. Serve with an extra dollop of yoghurt, rice & bread.
