Thai Green Curry Powder

An aromatic blend of spices inspired by the flavours of Thailand - perfect for making an authentic green curry.

Thai Green Curry Recipe:

Ingredients:

  • 500g chicken breast or boneless thighs, diced
  • 400g chestnut mushrooms, sliced
  • 100g mangetout
  • 100g trimmed green beans
  • 2 spring onions, finely sliced
  • 50g green curry powder
  • 1 x 400ml tin coconut milk
  • 1 chicken stock cube
  • 1 lime, juiced

Method:

  1. Heat oil in a pan, add the diced chicken and fry for around 5-10 minutes or until cooked through, remove and set aside.
  2. Add the mushrooms to a pan and cook until soft, remove and set aside, add the curry powder to the hot oil along with a splash of fish sauce and cook for 1 minute or until fragrant.
  3. Add the coconut milk, 100ml water, stock cube, mangetout, green beans and lime juice to the pan and simmer for 10 minutes.
  4. Add the chicken and mushrooms and cook for a further 5 minutes, top with spring onions & serve.
