Panang Curry Powder - 100g

A tasty Thai inspired curry packed with authentic flavours.
Ingredients:
- 50g panang curry powder
- 500g chicken breast - chopped
- 1 onion - sliced
- 2 bell peppers - sliced (green or red)
- 1 thumb ginger - grated
- 5 cloves garlic - minced
- 400ml coconut milk
- 2tsp cornstarch
- 50g light brown sugar
- 1tbsp peanut butter (or peanut butter powder)
- 1tbsp fish sauce
- 1tbsp lime juice
- Heat oil in a pan and add the onions, peppers, garlic & ginger, cook for 4-5 mins.
- Add the curry powder, peanut butter and cook for a further 2 mins.
- Add a the cornstarch to a small amount of coconut milk and mix until combined, add the remaining coconut milk to the pan and mix well.
- Add the cornstarch mixture to the pan and stir till combined, add the chicken and simmer for 10-15 minutes until cooked through.
- Stir in the sugar, lime and fish sauce, season with salt & pepper.
