Hot Jamaican Curry Powder

A combination of warm, fragrant spices to make a traditional Jamaican style curry dish.

Jamaican Curry Chicken Recipe:

Ingredients:

  • 500g boneless chicken thighs
  • 1 large potato, peeled & diced
  • 2 carrots, peeled & diced
  • 50g hot Jamaican curry powder
  • 200ml coconut milk
  • 1 tbsp dried cut thyme
Method:

  1. In a large bowl, add the chicken, a splash of oil and the curry powder, mix well until combined and leave to marinade for at least 2 hours.
  2. Heat oil in a pan and add the chicken, fry until lightly brown on all sides, add the potato, carrot & thyme, cover with water, cover and cook for 25 minutes.
  3. Stir in the coconut milk and cook for a further 5-10 minutes or until thick.
  4. This also works great in the slow cooker!
