Bicarbonate of Soda

A raising agent often used in baked goods such as soda bread, gingerbread, pancakes and fruit cakes.

  • When added to mixtures, bicarbonate of soda produces carbon dioxide, which results in a lighter texture in baked bread or cakes.
  • This needs moisture to activate and is often combined with yoghurt, buttermilk or milk.
  • Baking soda is well known for achieving the light fluffy texture in American pancakes.
  • Try stirring into a home made caramel before setting, to create honeycomb.
  • This can also be used to make baking powder, by combining 1/2tsp cream of tartar with 1/4tsp bicarbonate of soda.
