A traditional Spanish tapas dish.
- 900g potatoes
- 1 onion, diced
- 2 tbsp minced garlic
- 2 tsp sweet paprika
- 1 tsp chilli powder
- 250g chopped tomatoes
- 1 tbsp tomato puree
- Preheat the oven to 200°C, heat olive oil in a pan and add the onion, cook until soft.
- Add the garlic, chopped tomatoes, tomato puree, paprika, chilli powder, sugar and a pinch of salt, bring to the boil and simmer for 10 minutes.
- Cube the potatoes into bitesized pieces and pat dry, add to a bowl and toss with some olive oil, paprika, chilli powder and salt, roast for 40-50 minutes, turning occasionally.
- When the potatoes are crisp and cooked through, add to a dish and top with the tomato sauce mixture.
