A tasty, easy chow mein recipe - an ideal fakeaway! (serves 2)
300g chicken breast, chopped
100g Tongmaster chow mein marinade
4 nests egg noodles
200g tenderstem broccoli
100g edamame beans
1 red bell pepper - sliced
4 spring onions, sliced
2 garlic cloves (or 1tbsp minced garlic)
Chilli flakes (to taste)
Chop the chicken breast into bitesize pieces & add to a bowl, add 1tbsp water and 30g chow mein marinade powder, mix well until coated and leave for 5-10 minutes (or longer if you have time!)
While the chicken is marinating, chop your vegetables and set aside, keep some of the spring onions separate to garnish.
Cook the noodles according to packet instructions.
Add a splash of sesame oil to a hot wok and stir fry the chicken until cooked through, add the garlic, broccoli, beans & pepper and stir fry for another 2-3 minutes.
In a bowl, add 1tbsp sesame oil, 1tsp fish sauce, 2tbsp soy sauce & 20g chow mein glaze and mix thoroughly.
Add the cooked noodles to the chicken/vegetable mixture and the sauce to the pan and stir thoroughly until coated & heated through.
Add the spring onions & heat for a further minute.
Serve & garnish with the remaining spring onions!
